Overview

Broccoli, Brussels sprouts, kale, cabbage, cauliflower, and related Brassicaceae-family vegetables share a distinctive sulfur chemistry that is responsible for both their pungent flavor and much of their studied health interest. This is one of the more consistently evidence-backed categories in plant nutrition.

Active compounds and evidence

Cruciferous vegetables contain glucosinolates — sulfur-containing compounds that are largely inert until the plant’s cells are damaged by chewing, chopping, or crushing. This releases the enzyme myrosinase, which converts glucosinolates into biologically active compounds:

  • Glucoraphanin → sulforaphane, via myrosinase. Sulforaphane is the most-researched of these compounds — it activates the Nrf2 pathway, which upregulates the body’s own Phase 2 detoxification enzymes, and has shown antioxidant and anti-inflammatory effects in laboratory and early clinical research. Broccoli sprouts (harvested at 3–5 days) contain substantially more sulforaphane precursor per gram than mature broccoli heads.
  • Glucobrassicin → indole-3-carbinol → DIM (diindolylmethane), compounds studied for their role in estrogen metabolism, though clinical evidence in humans for specific disease outcomes remains preliminary.

Cooking method matters a lot. Myrosinase is heat-sensitive: prolonged boiling or overcooking can destroy most of it, substantially reducing sulforaphane formation even though the glucosinolate precursor is still present. Light steaming (roughly 1–3 minutes) is generally considered a good balance — it preserves more myrosinase activity than boiling while still reducing raw bitterness. Adding a small amount of raw mustard seed powder (which is myrosinase-rich) to overcooked crucifers can help restore some conversion capacity.

Safety and contraindications

  • Thyroid/goitrogens: Glucosinolates are goitrogenic compounds that can interfere with iodine uptake by the thyroid at very high raw intakes. For most people eating normal food-level amounts, this is not a clinical concern. People with hypothyroidism are generally advised to cook cruciferous vegetables (which reduces goitrogen content) rather than avoid them, and to ensure adequate iodine intake — not to eliminate this vegetable family.
  • Vitamin K and blood thinners: Kale and other leafy crucifers are high in vitamin K, which can affect warfarin dosing. Patients on warfarin should keep their intake consistent rather than avoiding these vegetables, and coordinate with their prescriber.
  • Digestive: The fiber and sulfur compounds can cause gas or bloating in some people, especially with sudden increases in raw intake.
