Overview
Beyond sauerkraut and kimchi, almost any vegetable can be lacto-fermented: submerged in a salt brine (typically 1.5–3% of the vegetable-and-water weight) in an anaerobic environment, where naturally occurring lactic acid bacteria — chiefly Lactobacillus plantarum and related species — convert plant sugars into lactic acid. The dropping pH is what preserves the vegetable and gives it its characteristic sour flavor. This is distinct from vinegar pickling, which preserves food by adding acid rather than growing it through fermentation.
Common preparations
- Fermented pickles: cucumbers in a salt brine with dill, garlic, and spices — not the same product as vinegar-brined “pickles,” which are not fermented. Fermentation time determines whether the result is a lightly fermented “half-sour” or a longer, softer, more acidic “full-sour” pickle.
- Fermented carrots, beets, and onions: sturdier vegetables that hold their texture well through one to two weeks of fermentation. Carrots largely retain their beta-carotene content and orange color; fermented beets retain their betalain pigments (harmless red/purple coloring that can also tint stool); fermented onions become milder and sweeter than raw onions.
- Fermented salsa and hot sauce: tomatoes, chilies, and aromatics fermented briefly (a few days for salsa, longer for chili mash used in hot sauce) develop more complex, tangy flavor than their fresh or vinegar-based counterparts. Canning a fermented product (applying heat to seal it for shelf storage) kills the live cultures, so fermented salsas and sauces intended to stay probiotic should be refrigerated rather than canned.
Nutritional notes
Fermentation modestly increases B-vitamin content and the bioavailability of some minerals, and unpasteurized fermented vegetables retain live lactic acid bacteria. As with other fermented vegetables, brine-based products are relatively high in sodium.
Troubleshooting and safety notes
- Thin, white, wrinkled kahm yeast on the surface is generally harmless and can be skimmed off; fuzzy, colored (green, black, pink) mold means the batch should be discarded.
- Cloudy brine and white sediment at the bottom of the jar are normal parts of the fermentation process, not signs of spoilage.
- Soft or mushy vegetables usually indicate the ferment was too warm, under-salted, or exposed to air — food safety, not just texture, is the concern if vegetables were not kept fully submerged in brine.
- The finished product should smell pleasantly sour, not putrid; trust your senses and discard anything that smells off.
- Fermented vegetable products remain high in sodium — a relevant factor for people managing blood pressure.
