Overview

Fermenting fish in salt is one of the oldest preservation methods used along coastlines worldwide, developed long before refrigeration to keep an easily-spoiled protein edible for months. Salt draws out moisture and suppresses spoilage organisms, while lactic acid bacteria (naturally present or added) and enzymes from the fish’s own digestive tract break proteins down into free amino acids and peptides. This is what produces the intense umami flavor — and, in some preparations, the famously pungent aroma — associated with this food category.

Regional traditions

  • Surströmming (Sweden): Baltic herring lightly salted (roughly 10–15%, less than dry-salted fish) and fermented for months in barrels, then canned — fermentation continues inside the tin, which is why cans bulge and are traditionally opened outdoors.
  • Jeotgal (Korea): salted, fermented seafood — shrimp (saeujeot), anchovy (myeolchijeot), and many regional varieties — eaten as a side dish and used as a core seasoning in kimchi.
  • Bagoong (Philippines), rakfisk (Norway), and narezushi (Japan) follow the same basic salt-and-time principle. Narezushi, made with crucian carp packed in rice for months to years, is the historical ancestor of modern sushi — the rice traditionally drove fermentation and was discarded, with only the fish eaten.

Nutritional notes

Fermentation pre-digests fish protein into free amino acids and peptides, and largely preserves the omega-3 fatty acid content of the original fish. B-vitamin content increases modestly through microbial activity. Unpasteurized, unheated products retain live lactic acid bacteria; canned or heat-processed fermented fish generally does not.

Safety notes

  • Sodium: fermented fish products are very high in sodium and are traditionally used in small, condiment-sized portions — a relevant consideration for anyone managing blood pressure.
  • Histamine: fish tissue contains histidine, which bacteria convert to histamine during fermentation and improper storage. Eating fish with elevated histamine levels can cause flushing, headache, or gastrointestinal symptoms (scombroid-type reaction) in sensitive individuals — a distinct risk from mercury exposure. Buying from established producers and refrigerating products promptly after opening reduces this risk.
  • Home-fermenting fish carries a real botulism risk in under-salted, poorly sealed, or improperly refrigerated conditions; commercial producers follow controlled salt concentrations and fermentation times that ad hoc home methods may not replicate safely.
