Overview

Long before commercial brewing, cultures around the world fermented local staples — fruit, agave sap, corn, millet, rice, or honey — into beverages using wild or cultivated yeast. Alcohol content varies enormously, from beverages that are barely alcoholic (fresh tepache, fruit kvass) to full-strength wines and spirits (mead, sake). Alcohol is a Group 1 carcinogen with no risk-free level of consumption, so none of the beverages below should be framed as health foods; any potential probiotic or nutrient content does not offset the health risks of alcohol intake.

Regional traditions

  • Tepache (Mexico): pineapple rind fermented briefly (1–3 days) with piloncillo (unrefined cane sugar) and spices using wild yeast; typically low alcohol (roughly 0.5–2% ABV) because it’s usually consumed very fresh, though alcohol content rises the longer it ferments.
  • Pulque (Mexico): fermented sap of the agave (maguey) plant, with a documented history stretching back millennia in Mesoamerica; milky and viscous, typically around 4–6% ABV.
  • Chicha (Andes): fermented corn beer, traditionally started in some communities by chewing corn (an enzyme in saliva helps break down starch into fermentable sugar) though malted-corn methods are common today; typically 1–3% ABV, with ceremonial significance in Andean cultures.
  • Grain and honey ferments: African millet/sorghum beers (such as busaa or pito), Eastern European rye-bread kvass (traditionally very low alcohol, roughly 0.5–1.5% ABV), Asian rice wines such as sake (around 15–20% ABV) and Korean makgeolli (roughly 6–8% ABV, unfiltered and milky), and honey mead (which can range from about 8–20% ABV) all follow the same yeast-fermentation principle applied to a different local staple.

Nutritional notes

Some of these beverages, particularly low-alcohol grain and fruit ferments consumed unpasteurized, contain live microorganisms and B vitamins from fermentation. However, alcohol itself is toxic to gut bacteria at meaningful concentrations, so probiotic content and potential benefit decline as alcohol content rises. Commercial versions of traditional beverages are frequently pasteurized (killing live cultures) and may have added sugar.

  • These are alcoholic beverages. Alcohol content should always be checked before consumption, particularly for low-ABV traditional drinks that can be mistaken for non-alcoholic.
  • Pregnant people and anyone advised to avoid alcohol should avoid all beverages on this list, including those with low nominal alcohol content.
  • Home fermentation of fruit, grain, or sap beverages can produce unpredictable alcohol levels and carries contamination risk if not made with clean equipment and appropriate hygiene.
