Overview
Almond milk is made by blending almonds (or almond paste) with water and straining out the solids. Commercial versions are usually quite dilute — often around 2% almonds by weight, with the rest water, thickeners (such as carrageenan or gellan gum), emulsifiers, and added vitamins — while homemade versions made with a higher ratio of almonds to water are creamier and more nutrient-dense.
Nutritional profile
Unsweetened almond milk is notably low in calories, typically in the range of 30–60 calories per cup, and low in protein (often around 1 g per cup) — considerably less than dairy milk or soy milk. It is naturally low in carbohydrate and saturated fat. Almonds contribute vitamin E, an antioxidant, and most commercial brands are fortified with calcium and vitamin D to bring them closer to cow’s milk on those nutrients. Because of its low protein and calorie content, almond milk is not a nutritional substitute for dairy milk in contexts where protein intake matters, such as for growing children.
The water-use debate
Almond cultivation is water-intensive relative to other plant milk crops, and roughly 80% of the world’s almonds are grown in California’s Central Valley, a drought-prone region. This has made almond milk a frequent target of environmental criticism, and almond farming’s reliance on trucked-in honeybee colonies for pollination has also raised concerns about pollinator health. That said, almond milk’s overall water and carbon footprint is still generally lower than dairy milk’s when compared on a per-liter basis, even though it uses more water than oat or soy milk.
Carrageenan
Some almond milk brands use carrageenan, a seaweed-derived thickener, to improve texture. Its safety has been debated — some animal studies have raised concerns about degraded carrageenan — and a number of brands have reformulated with alternatives like gellan gum or locust bean gum in response to consumer concern, though the FDA continues to permit food-grade carrageenan as a stabilizer.
Safety notes
Almond milk is unsafe for anyone with a tree nut allergy. Because of its low protein content, it should not be used as a primary milk substitute for infants or young children without guidance from a pediatrician or dietitian.
